Egg Substitute for Vegans
1 c. water 
1 Tblsp. ground flax seeds 

Boil for 3 to 4 minutes, then refrigerate for 15 minutes.   You can strain it or not, as you prefer.
This makes the equivalent of 2 eggs.
This can be used in most recipes that don't need the color, as in lemon meringue pie.
