Heart-Warming Ginger Bread

Preheat oven to 350F
Sift together:
1 cup Rolled Oats (Whole Grain Milling, from Whole Farm Coop)
1 1/2 cups White Flour (Swany White Organic, from Whole Farm Coop)
2 teaspoons Baking Soda
1/2 teaspoon Salt
1 teaspoon Ginger
1 teaspoon Cinnamon

Add:
1 grated Orange rind
1 1/2 Diced Dried Fruit (use plums and raisins)

Mix liquid ingredients together:
1/2 cup Olive Oil
2 - 3 Eggs (3 small or 2 regular, from Whole Farm Coop)
1/2 cup dark Molasses
1/2 cup Honey (from Whole Farm Coop, of course!)
1 cup Applesauce

Blend with dry ingredients. Beat well

Pour into a greased 9" x 12" or 12" round pan. Bake about 60 minutes, or until a knife inserted in the middle comes out clean. Remove from oven, turn out to cool. Delicious served warm with apple sauce or hard sauce. Keep leftovers covered tightly and refrigerate if kept more than a few days.

(Nutrition notes: Olive oil, oats, applesauce and plums are good for keeping your cholesterol in check. Ginger and Cinnamon are calming to the stomach. Molasses contains calcium and iron.)
