Dana Jackson’s Pork Roast for singles

Brown the meat in a Dutch oven, then salt it and put a lid on and bake it, adding water if necessary, until very tender (3 hours, usually).

The first meal is with a baked potato and vegetable and mustard on the meat. Then it makes many meals for 1 person. Trim off the fat, then make serving size packages of the pork and freeze it.

Serving suggestions for quick meals with frozen portions:
  • Put bottled barbeque sauce on it and warm up a couple portions.
  • Make a veggie stir fry and add small pieces of pork and season with soy sauce.
  • Put pieces in stir fried and steamed red cabbage and apples.
  • Add it to salsa and beans and put it in tortillas.
It's very economical used this way. And it saves me time in preparing meals.
