Roast WFC Chicken a la Helen Paul

3-4 pound Free Range Chicken

Preheat oven to 500 degrees. Place cleaned, dry, unstuffed chicken breast down on rack and begin roasting. Within 5 minutes, reduce heat to 450.

Mix: 3 Tbsp. olive oil with 1 tsp. dried thyme, rosemary, marjorum, or sage or a combination, salt and pepper to taste.

After 20 minutes of roasting, spoon some of olive oil mix over chicken back; turn breast side up and baste.

Return to oven. After 15 minutes, baste breast again. (It should be starting to brown). Return to oven. Reduce heat to 325 and continue roasting until thermometer in thick of thigh indicates160 degrees. (Total roasting time is usually an hour and 10-20 minutes. If the juices in the cavity are red, cook a little longer.)
